Tasting Notes

Pale straw in colour with green hues. The aroma of this sauvignon blanc fresh and inviting with guava, passionfruit and ripe lime characters underpinned by a subtle note of fresh herbs. The fruit profile on the palate displays intensity and great clarity and is supported by refreshing juicy acidity and wonderful finesse.

Vineyard

Sauvignon blanc grapes were sourced from the upper reaches of the cool climate Yarra Valley, grown on a variety of soil types identified as being ideal for producing distinctly varietal sauvignon blanc. Vineyards were meticulously maintained during the growing season to achieve dappled light throughout the canopy, ensuring the retention of  pristine varietal  flavours.

Wine Making

The 2010 Domaine Chandon Sauvignon Blanc was harvested when the winemaking team had determined that the grapes were displaying optimum flavour intensity and acidic balance. Harvest and pressing occurred in the coolest part of the early morning to ensure the delicate fruit flavours of the vineyard were captured in the juice. This juice was held in contact with the lees for a short time to liberate complex flavours and add texture to the wine. The clear juice was racked and inoculated with a yeast strain that would complement the fruit profile of the wine. Fermentation occurred under the watchful eye of the winemakers at cool temperatures in stainless steel tanks, after which it was clarified, blended and bottled in June 2010.
